Mocked Irish Coffee

Ingredients

1 can of coconut milk

maple syrup

vanilla extract

1 cup of coffee

agave nectar

rum extract (optional)


Directions:


Coconut topping: 1. Refrigerate a can of coconut milk overnight.

2. Scrape off the top layer of solidified coconut milk into a bowl.

3. Add maple syrup, start with 1 tbsp. to start and then add more to taste.

4. Add vanilla extract and mix with an electric mixer or a whisk until fluffy.


Coffee:

  1. Make you a cup of your favorite coffee.

  2. Stir in 1-2 tsp. of agave nectar and 1/2 tsp. of rum extract (optional) to your coffee.

  3. Add the Coconut topping and enjoy.
