Spaghetti Squash Feta Bake


INGREDIENTS:

  • 1 Spaghetti Squash, cut in half and remove seeds

  • 1 - 8oz. block of feta

  • Container of cherry tomatos, cut in half

  • 2-4 cloves of minced garlic

  • 4 tbsp. Of Grapeseed oil

  • 2 tbsp. Basil

  • Salt & pepper


DIRECTIONS:


  1. Preheat the oven to 400 degrees.

  2. Cut the Spaghetti squash in 1/2 and remove the seeds, if you haven't done so already. Place in a pan right side up and add grapeseed oil in the squash.

  3. Cut the block of feta in 1/2 and add each half to the spaghetti squash.

  4. Add 2-4 cloves of garlic on each half.

  5. Split the container of halved cherry tomatoes to both sides.

  6. Add a little more grapeseed oil and your seasoning. (Basil, salt, & pepper)

  7. Place in preheated oven for about an hour, or until the feta is melted and the spaghetti squash is tender.

  8. Mix well and top with Basil.

  9. Enjoy!
